Jour, journée, soir, soirée
These word pairs can be problematic, because they are translated in English as one word.
Generally, jour is used for counting
Un jour
Deux jours
Trois jours
Des jours
It’s also used in certain expressions
Bonjour
Le jour de l’An.
New Years’ Day.
To talk about a specific day
Le jour où je t’ai rencontré
The day I met you
And to talk about daytime vs. nighttime
Je travaille le jour, mais ma copine travaille le soir
I work during the day, but my girlfriend works at night
Journée applies more to describe the events of a day
J’ai passé une belle journée!
I had a great day!
Je vais prendre une journée de repos
I’ll take a day to rest
C’est une journée historique
It’s a historic day
The same logic applies for soir/soirée, and an/année.
But as with everything else, there are limits in trying to explain how the language works, because it’s not exactly logical or fixed in stone. What dictates everything is usage, and you have to remember expressions as a whole, rather than asking yourself which word fits into the set of rules that you’ve learned.

One day, I’d like to go back to Mexico
Mes vacances vont être très simple. On va passer deux jours à Cancun, et cinq jours à Cozumel.
My vacation will be simple. We’ll spend two days in Cancun, and five days in Cozumel.
Chaque soir, je bois une bière en regardant les étoiles
Every night, I drink a beer while watching the stars
Je ne t’ai pas vu le jour de l’An, mais je vais quand même te souhaiter bonne année!
I haven’t seen you on New Year’s Day, but I’ll still wish you happy new year!
